The Bollinger R.D. 2007,is champagne made of paradox: extreme aromatic maturity combined with incredible structural freshness. While La Grande Année 2007 has now completed its journey, the R.D., thanks to the recent disgorgement, maintains a vibrant tension. On the nose, it is complex and deep: notes of chestnut honey, saffron, and ginger stand out, followed by hints of ripe quince and toasted hazelnut. On the palate, it is masterful in contrast; the entry is broad and creamy, almost imposing, but is immediately enlivened by chalky minerality and citrusy acidity that lifts the tasting.
