Taste: Initially restrained, it opens with power and intensity while maintaining elegance and freshness, with a savory progression and a persistent finish.Pressing: Gentle, using vertical hydraulic presses. Fermentation: Spontaneous with indigenous yeasts. Aging: 18 months in small oak barrels, including 6 months on fine lees, followed by 12 months in large barrels before bottling. This wine has excellent aging potential and can evolve positively for over 20 years if stored properly. Grape blend: 80% Clairette, 10% Grenache Blanc, 5% Bourboulenc, 3% Ugni Blanc (Trebbiano), 2% Muscat Blanc à Petits Grains.
